[ Recipe ] Vegetable Stock - For those who just started to be vegan

What is the easiest dish to make when becoming a vegan?


Well, this is not exactly a dish but it will be a great company for you to start off your vegan journey - vegetable stock! 

All you need is 5 ingredients:

  • Celery
  • Carrot
  • Onion
  • Thyme
  • Bay leaf

This is a classic combination for making vegetable stock. Feel free to add more vegetable if you want. For Soulistic, as we are trying to make use of every part of our ingredients as we go, we will add in the vegetable trims we have left over from that week.

How to use?

You can use it in:

  • Soup base for your noodle;
  • Pasta sauce or any other sauce;
  • Making soup to enhance flavour;
  • Stew (both western and asian)

Now here is the recipe to make this veggie stock:



  • 1 medium white onion
  • 1 medium carrot
  • 1 large celery stalk
  • 10 sprigs thyme
  • 1 bay leaf
  • 2.8L filtered water



  1. Bring water to a boil. Add ingredients. Lower to a simmer and cover.
  2. Cook for 30 minutes.
  3. Remove from heat and strain.
