Soul hooked on... Watermelon

Deliciously sweet and juicy - it’s a summertime staple! My favourite kind are the seedless ones - more fruit, less seeds to spit out 😆


Did you know seedless watermelon was only created 50 years ago? But don't worry they aren't genetically modified. They are actually a hybrid watermelon created by cross breeding a watermelon with 22 chromosomes with a watermelon with 44 chromosomes, resulting in a sterile watermelon.

So rather than producing mature black seeds that you often see, it produces immature white "seed coats" that are perfectly safe to eat!

Interested in learning some diet tips when it comes to eating melons? ALWAYS eat melons first and here's why!

We should always make sure that we look after our bodies by way of digestion. It should be easy, quick and efficient. Your body will reap the benefits and energy produced.

Watermelon and other melon varieties only take 15-30 mins to digest, much faster than other fruits and food. By the time it hits your stomach, it's pretty much already digested! So it is best to be eaten alone and ideally best to eat first thing in the morning.

Enjoy a bowl of freshly cut watermelon before your first cup of coffee for the day!

And here's another fun fact - watermelon contains 92% water, it's no wonder it's called WATERmelon! 🍉💦

I've mentioned before the benefits of consuming ultra-hydrating fruits and veg to rehydrate the body after a hot day or workout instead of just simply water, so let's add watermelon to that list too! It's a no brainer.

It's been uber-sunny in Hong Kong the past 2 weeks and all I have been craving for is a simple gazpacho-like cold watermelon soup. Imagine a mix of watermelon, tomato and cucumber, seasoned well with salt and pepper. Finishing up with olive oil and lime juice.... a ladle of fresh watermelon puree, along with shower of chives, mint and basil?

There are abundance of watermelon in the market lately. Try to make one for yourself and loved ones this weekend!

Instruction:

  1. Simply blend all the above ingredients, except olive oil, to your preferred consistency. Stream in the oil and pulse it!
  2. For fine-dining quality, pour your mixture into a fine strainer (don't forget to get a jar to hold the liquid. Cover with cling film and place in the fridge for at least 3-4 hours before serving.
  3. 15 minutes before serving, start plating your dish (see tips below). Take out the jar and pour the liquid on your dish. Don't forget to take video and photos and tag @soulhookedonfood so I get to see your creation too!

What I have prepared for you today is some plating tips. I thought this may be something therapeutic while we all staying in.
