TEDx Civic Exchange: Think Local, Think Green

Climate change is a threat multiplier that has affected, is affecting and will continue to affect whole communities, livelihoods and even everyday lives. 
 
Do you bring your own shopping bags? Do you request for no cutlery when getting takeaways? Is that enough? Can a small number of people making these everyday lifestyle changes be enough? Perhaps. Beyond individual consumers making lifestyle changes and demanding corporate action, businesses and communities have to band together and take action now.
 

Global warming, greenhouse gases… We are creating a man-made disaster on the global scale. And to start a business at a time like this, it is a must to consider our nature. Staring from food production.

When creating our vegan products, we try to use every part of the ingredients and use local produce when possible. Take one of our products - kale chips as an example. The kale itself is grown by local farmers and since it is grown in HK, we reduce the pollution created during transportation.

In terms of making it, while only the leaves are used to make the chips, we keep the stems and add them to our homemade vegetable stock recipes. Same for any other vegetables trims we have left from that week. Vegetable stock will then be used in soup at our private events / catering service and even used when making our homemade kimchi sauce. 

Vegetable stock is a great ingredient to keep in your fridge,  it can be used in almost every dish and occasion. Simply put them in an airtight jar and you can keep it for 2-3 months. Here are some items I have made using my vegetable stock.

When it comes to festive seasons, we end up with a lot of trims and converting them into vegetable stock would be overwhelming. That’s when we take the excess to our mini farm in Tai Po. And convert them into compost.

These homegrown vegetables will then be used in our products and private event menu. And from here, we created our mini supply chain for Soulistic. Shorter transportation time also allows our vegetables to stay fresh and more nutritious.

If a small startup can create a system for itself, imagine if we all do this together, how much change can we bring to our planet?

If you love something, you want to take care of them, protect them and keep them safe. Put down your phone next time when you are waiting for your takeaway, or getting grocery. Simply look around how much waste we are creating.

What actions we as individuals take to support the transition to a more sustainable future is really about how much you love this planet.
